I have been serving this dish as an appetizer or brunch buffet item since my friend Ehtel gave it to me thirty years ago, and it has never lost its appeal.

4 Ounce(oz)  butter, melted
7 Ounce(oz)  diced green chiles, undrained
1 Pound(lb)  monterey jack cheese, shredded
1/2 Cup(c)  all-purpose flour
10 Drop(dr)  tabasco sauce
1 Teaspoon(t)  kosher (coarse) salt
1 Teaspoon(t)  baking powder
1 Pint(pt)  cottage cheese
10   large eggs
1 Teaspoon(t)  butter, for greasing the pan


Preheat the oven to 400°F.

Butter a 13 x 9-inch glass baking pan.

Combine the eggs, cottage cheese, baking powder, salt, Tabasco, and flour in a blender, and whirl until smooth .

Combine the Jack cheese, chiles (and their liquid), and melted butter in a large bowl.

Add the cottage cheese mixture and mix together lightly.

Pour the mixture into the prepared baking pan and bake for 15 minutes. Then reduce the heat to 350°F and bake until golden brown, set, and puffy, 25 to 30 minutes.

Cut into squares or rectangles, and serve hot.
