Spicy Lemon Garlic Marinated Shrimp Barbecue

1/4 Cup(c)  fresh lemon juice
1 Teaspoon(t)  lemon rind, finely grated
2 Tablespoon(T)  olive or vegetable oil
1/2 Cup(c)  parsley, minced
3 Clove(clv)  garlic, minced
1/4 Teaspoon(t)  hot red pepper sauce
1/4 Teaspoon(t)  salt
1 1/4 Pound(lb)  medium-sized shrimp, shelled and deveined
1   loaf crusty italian bread
2   medium-sized zucchini, halved crosswise and cut lengthwise into strips 1/4 inch wide
2   medium-size sweet red peppers, cored, seeded, and cut into 3 1/4 by 1/4 strips
2 Tablespoon(T)  fresh mint or parsley, minced
1/4 Cup(c)  water


Prepare the shrimp: Combine water, lemon juice, lemon rind, oil, parsley, garlic, red pepper sauce, and salt in a self-sealing plastic food storage bag. Add the shrimp, push out all the air, seal, and marinate at room temperature for 20 to 45 minutes. For the vegetable packets: On four 18 inch long sheets of heavy-duty foil, mound the zucchini and red peppers, dividing the total amount evenly. Sprinkle with oil, mint, salt, and garlic, again dividing the total amount evenly. Seal into oiled packets. On a grill set 6 inches above white-hot coals, cook the vegetable packets for 18 minutes. Meanwhile, thread the shrimp onto eight 8 inch metal skewers and set aside. Reserve the marinade. Place the shrimp skewers on the grill after the vegetables have cooked for 10 minutes. Cook along with the vegetables for 4 minutes on one side, then turn, brush with the marinade, and grill 4 minutes more, or until the shrimp are cooked through and the vegetables are tender. Serve the shrimp and vegetable packets with chunks of crusty Italian bread and a small bowl of the remaining marinade in which to dunk the bread.

Additional notes

If you substitute sea scallops, cut them into l inch cubes and grill them for about 2 minutes less. This recipe can easily be doubled if company's coming.
