Spicy Peanut Tofu Skewers

Tofu absorbs marinades well, which gives it more flavor, since otherwise it can berather bland. It is also firm enough to remain on the skewers if cooked quickly

Ingredients

1   handful of fresh cilantro, chopped, to garnish
1/3 Cup(c)  unsalted peanuts, chopped
1/2   cucumber, chopped
3 Tablespoon (Metric)(tbsp)  sweet chili dipping sauce
6 Ounce(oz)  dried rice noodles
1 Ounce(oz)  zucchini, cut into thick slices
2   red bell peppers, seeded and cut into l-inch/2.5-cm squares
2 Tablespoon (Metric)(tbsp)  crunchy peanut butter
1   garlic clove, crushed
1   fresh red chile, seeded and sliced
5 Tablespoon (Metric)(tbsp)  soy sauce
1 Tablespoon (Metric)(tbsp)  peanut or vegetable oil
8 Ounce(oz)  firm tofu (drained weight), cut into l-inch/2.5-cm cubes

Preparation

Pat the tofu cubes dry with paper towels. Put the oil, soy sauce, chile, garlic, and peanut butter in a food processor and process to a paste. Transfer to a bowl and stir the tofu cubes into the marinade. Cover and let marinate in the refrigerator for 1 hour.

Meanwhile, soak 8 bamboo skewers in cold water. Thread the tofu cubes, red bell pepper squares, and zucchini slices alternately onto the skewers and brush with any remaining marinade. Cook in a preheated ridged grill pan over medium high
heat or under a preheated medium-high broiler, turning occasionally, for 3-4 minutes,or until browned all over.

Meanwhile, soak the noodles in a pan of boiling water, covered, for 4 minutes, or according to the package directions.
Drain the noodles and transfer to a bowl. Add the chili sauce, cucumber, and peanuts and toss to coat. Divide between 4 serving plates and top with 2 skewers each. Serve immediately,garnished with the cilantro.

This is a good tofu recipe because the flavor really seeps into the tofu. I added more red chili for more heat.
