2 1/2 Cup(c)  white whole wheat flour
2 1/4 Teaspoon(t)  baking powder, divided
3/4 Teaspoon(t)  salt
1 1/2 Teaspoon(t)  cinnamon
1/2 Teaspoon(t)  nutmeg
3/4 Cup(c)  applesauce
1/4 Cup(c)  canola oil
1/4 Cup(c)  blackstrap molasses
1/2 Cup(c)  agave nectar
1 Teaspoon(t)  vanilla
2 Cup(c)  cooked pumpkin


Preheat oven to 350° F. In a medium bowl, combine flour, 1 1/2 teaspoons baking powder, salt, cinnamon and nutmeg. In a large bowl, combine applesauce with remaining baking powder. Add oil, molasses, agave nectar, vanilla and pumpkin to applesauce mixture. Stir to combine. Slowly add dry ingredients to wet. Spoon into oiled muffin pan. Bake 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
