Recipe Description
Roasted shallots have a sweet, unique flavor all their own. When combined with tangy tomatoes, they make a perfect topping for toasted bread rounds.

8   shallots
1/4 Cup(c)  extra virgin olive oil
1 Teaspoon(t)  garlic, minced
1/2   red onion, finely diced
1   ripe tomato, finely diced
1/4 Cup(c)  fresh cilantro, chopped
8 Drop(dr)  tabasco sauce, or more to taste
1 Pinch(pn)  salt, to taste
8 Slice(sli)  italian bread, 1/2 to 3/4 inch thick
2 Tablespoon(T)  extra virgin olive oil
1 Pinch(pn)  black pepper, freshly ground, to taste


Heat oven to 250°F. Place the shallots and 1/4 cup olive oil in a small baking dish or ovenproof saute pan and roast until soft, about 40 minutes. Cool and cut into quarters. Place shallots in a bowl with garlic, onion, tomato, cilantro, Tabasco, salt and pepper and mix well. Toast bread and drizzle with olive oil. Top bread slices with salsa.
