Recipe Description
This easy spinach casserole features all reduced fat ingredients, beneficial to calorie counters. I love to prepare this as a side dish to holiday baked ham.

Ingredients

20 Ounce(oz)  frozen chopped spinach
2 Ounce(oz)  fat free cream cheese
2 Ounce(oz)  feta cheese, crumbled
1/2 Cup(c)  fat free milk
1/2 Cup(c)  egg substitute
2 Tablespoon(T)  green onion, finely chopped
3/4 Cup(c)  bread crumbs
1 Tablespoon(T)  parmesan cheese, grated
2 Teaspoon(t)  low fat margarine

Preparation

Preheat oven to 350° F. Cook spinach according to package directions. Drain in a colander. Place spinach in a saucepan. Over medium heat stir cream cheese and feta cheese into the spinach until cream cheese is melted. Stir in the milk, egg substitute, and onion. Coat a 1 1/2 quart casserole with nonstick cooking spray. Pour spinach mixture into the casserole dish. Toss together the breadcrumbs, Parmesan cheese and melted margarine in a bowl. Sprinlde on top of spinach mixture. Bake covered for 40 minutes. Remove cover and continue to cook for an additional 10 minutes.
