  This is one way that I can get my family to eat spinach.

2   egg whites
10 Ounce(oz)  chopped spinach, thawed
1 1/2 Pound(lb)  10% fat ground beef
1/4   ketchup (optionalpperoaf
1/4 Teaspoon(t)  freshly ground pepperoaf
1/8   ground nutmeged
1/2 Cup(c)  shredded reduced-fat mozzarella cheesec
1 Teaspoon(t)  dried oreganoed
1 Cup(c)  soft breadcrumbs (from about 2 slices of bread)
1 Teaspoon(t)  worcestershire sauceloaf
1   clove garlic, mincedloaf
1   shallot, minced
1 1/4 Teaspoon(t)  kosher salt, dividedloaf



Combine the beef, egg whites, breadcrumbs,and 1 teaspoon of the salt. Add the shallot, garlic,Worcestershire sauce, and oregano.

Using your hands, squeeze together almost as if kneading bread, until evenly mixed.

Put the spinach in a colander in the sink and squeeze out as much water as possible. Combine the spinach with the cheese, nutmeg, pepper,and remaining 1/4 teaspoon of salt.


On a piece of wax paper, shape the meat in to a rectangle approximately 12x8 inches. Spread the spinach mixture on top, leaving about l/2inch clear around the edges. Roll up, starting from a shorter side. Use the wax paper to help you do this, by bringing it up and pressing gently to form a firm loaf.

Press the ends together.Up to this point the meatloaf can be wrapped tightly and refrigerated for a day before baking.Place the loaf on a rack in a roasting dish.

Spread the ketchup on top, if desired.

Bake in a preheated 350 oven for 1 hour,
