Ingredients

6   cilantro sprigs, for garnish
3 Tablespoon(T)  cilantro, chopped
1 Pinch(pn)  pepper, freshly ground, to taste
1 Teaspoon(t)  salt
1 Teaspoon(t)  cumin, ground
1 Teaspoon(t)  oregano, dried
1 Tablespoon(T)  chill powder
1 1/2 Cup(c)  beef stock or broth
4 Ounce(oz)  green chiles, drained and diced
29 Ounce(oz)  tomatoes, with juice, diced
44 Ounce(oz)  black beans, drained and rinsed
4 Clove(clv)  garlic, minced
1 Cup(c)  celery, finely chopped
2 Cup(c)  yellow onion, chopped
1 Tablespoon(T)  olive oil

Preparation

In a soup pot over medium heat, warm oil. Add onion, celery and garlic and saute until tender, about 5 minutes. Add remaining ingredients except garnish and toppings. Reduce heat to medium- ow and simmer, uncovered, until flavors are blended, about 40 minutes. Ladle into bowls, garnish with cilantro sprigs, and pass the toppings separately.
