These cookies are light and delicate in flavor. Go easy if you top them with sprinkles. Too many will easily overpower these cookies.

1 1/4 Teaspoon(t)  xanthan gum
1/2 Teaspoon(t)  vanilla extract
1 Pinch(pn)  salt
1/4 Teaspoon(t)  baking soda
1/4 Teaspoon(t)  baking powder
1 Cup(c)  potato starch
2   eggs
1/2   sugar
1/4 Pound(lb)  butter


Preheat the oven to 375°F. Grease a cookie sheet. Cream the butter and sugar in a medium sized bowl. Add the eggs. Mix until light and thick. Add the other ingredients. Beat until thick and creamy. Drop by rounded teaspoonfuls onto the prepared pan. Press to a l inch thickness with moistened fingertips. Top with sprinkles, if desired. Bake for 8 to 9 minutes, until lightly browned. Transfer from the cookie sheet to a rack and let cool completely.

Additional notes

This mixing process is very important, especially for potato starch. First, it coats the flour and prevents the cookies from drying out too quickly. Second, it prevents the cookies from becoming too gummy.
