Pork chops that are covered with a gravy.

4   loin chops, 3/4 inch thick (6 to 8 ounces each)
2 Tablespoon(T)  chopped fresh parsley
1/4 Cup(c)  buttermilk
1 Cup(c)  canned chicken broth
3/4 Cup(c)  all purpose flour
1/2 Cup(c)  chopped onion
2 Tablespoon(T)  butter or margarine
1/4 Teaspoon(t)  ground nutmeg
1/4 Teaspoon(t)  ground black pepper
1 Teaspoon(t)  salt


In large bowl, combine flour, salt, pepper, and nutmeg.  Coat each pork chop with flour mixture, shaking off excess. Reserve the 2 tablespoons seasoned flour.

Meanwhile, in 12 inch skillet, melt butter over medium high heat.  Add pork chops and cook until golden brown, 3 to 5 minutes per side. Transfer chops to plate; keep warm.

Reduce heat to medium.  Add onion to skillet; cook, stirring, until tender, about 5 minutes.  Sprinkle onion with reserved seasoned flour; cook, stirring 1 minute.  Add broth, stirring to loosen any browned bits from bottom of skillet; simmer, 1 minute. Stir in buttermilk.  Return pork chops to pan.  Simmer 6 minutes, turning once, until cooked through.  Sprinkle with parsley.
