Vanilla cupcakes are wonderfully versatile for any special occasion or holiday, and they will make your mouth water.

4 Teaspoon(t)  baking powder
2 Cup(c)  powdered sugar
3 Cup(c)  all purpose flour
2 Tablespoon(T)  vanilla extract
1 Cup(c)  canola oil
2 Cup(c)  vanilla soy or other non dairy yogurt

Preparation

Preheat the oven to 350° F. Line 16 or 18 standard muffin cups with paper liners. In a large sized bowl, combine the yogurt, oil and vanilla. Sift the flour, sugar and baking powder on top. Fold the dry ingredients into the wet, being careful not to over mix. Divide the batter equally among the prepared cupcake liners. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean. Remove from the muffin tin and let cool completely before decorating.
