Ingredients

3 Cup(c)  long grain rice
1 Cup(c)  corn kernels, cooked
1 Cup(c)  peas, lightly steamed
1   cucumber, peeled, seeded and diced
1   large ripe tomato, cored and diced
2   scallions, sliced
1 Tablespoon(T)  fresh parsley, minced
1 Tablespoon(T)  fresh basil, minced
1 Tablespoon(T)  fresh dill, minced
1 Tablespoon(T)  fresh mint, minced
2 Tablespoon(T)  extra virgin olive oil
3 Tablespoon(T)  lemon juice
1/2 Teaspoon(t)  kosher salt
1/4 Teaspoon(t)  pepper, freshly ground, or more to taste

Preparation

Toss the rice together with the vegetables and herbs in a large bowl. In a small bowl, whisk together the oil, lemon juice, salt and pepper. Pour over the salad and toss.
