Swedish Limpa Bread With Anise And Caraway

Recipe Description
There are many varieties of this bread that include ale, instant coffee granules and various spices. Make this bread by hand, if you prefer. Let rise and shape as a rounded loaf or in a loaf pan. We like this version and have made it often for parties, house guests and our own use.

Ingredients

1   orange, juiced
1/2 Cup(c)  low sodium water
2 Tablespoon(T)  honey
2 Tablespoon(T)  extra virgin olive oil
1 Tablespoon(T)  white wine vinegar
2 Cup(c)  unbleached bread flour
1 Cup(c)  medium or dark rye flour
1 Teaspoon(t)  granulated onion
1 Teaspoon(t)  orange zest, grated
1/2 Teaspoon(t)  aniseed
2 Teaspoon(t)  caraway seeds, freshly ground
2 1/2 Teaspoon(t)  bread machine yeast

Preparation

Combine the orange juice with enough low sodium water to make 1 cup. Heat to 105° to 110° F. Place all the ingredients into your bread machine pan in the order listed or as the manufacturer suggests. Set for dough. Check for moisture after 10 minutes of kneading. If the dough is not balling up, add 1 tablespoon of water and wait for a few minutes. If it still does not ball up, add another tablespoon. If the dough is too sticky, then add 1 tablespoon white flour, wait a few minutes, then add another if the dough is still sticky. Lightly spray oil on the lid of the bread machine (you can clean off later) in case your dough rises to the lid. Preheat the oven to 375° F. When the dough is ready, transfer it to a 10 by 7 inch lightly oiled loaf pan. Let rise in a warm place or in a proofing oven for about 45 minutes to 1 hour, covered with a lightly floured cloth. Bake in the preheated oven for 40 to 50 minutes. Remove from the pan and cool on a rack. Serve hot, warm, or at room temperature. Store in a ziplock bag. You may store it in the refrigerator for up to 1 week.
