Recipe Description
This recipe is delicious as is, but you can certainly add many other ingredients.  I like pea pods, water chestnuts and cashews.

1/4 Cup(c)  onion, thinly sliced
1/2   small green pepper, cut into thin strips
2 Tablespoon(T)  soy sauce
1/4 Cup(c)  vinegar
2 Tablespoon(T)  cornstarch
1/4 Cup(c)  brown sugar
2 1/2 Cup(c)  pineapple chunks
3 Tablespoon(T)  butter
3   chicken breasts, boneless and skinless


Cut chicken into 3/4 to 1 inch pieces.  Saute chicken in butter for 2 minutes.  Drain pineapple, reserving liquid.  Combine sugar and cornstarch.  Add pineapple juice, vinegar, soy sauce and salt.  Add to chicken.  Cook and stir until sauce thickens.  Add pineapple, green pepper and onion.  Serve over rice.
