Tahini Orange Cookies

1 Cup(c)  tahini
2 Teaspoon(t)  pure vanilla extract
1/2 Cup(c)  pure maple syrup
1/4 Cup(c)  raw sugar
1   large orange, zested
1/2 Cup(c)  oats, ground
1/2 Cup(c)  brown rice flour
1/2 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  fine sea salt
1/2 Cup(c)  non dairy semisweet chocolate chips

Preparation

Preheat the oven to 350°F (180°C, or gas mark 4), or 1 teaspc 325°F (170°C, or gas mark 3) if using agave nectar. Line 2 baking sheets with parchment paper or silicone baking mats, such as Silpat. In a large-size bowl, whisk together the tahini, vanilla, syrup, sugar, and zest. In a medium-size bowl, whisk together the ground oats, flour, baking soda, baking powder, salt, and chocolate chips. Stir the dry ingredients into the wet. Divide the dough into 20 equal portions, using about 2 tablespoons (34 g) of dough. Place on the prepared baking sheets. Flatten a little, because the cookies won't spread much while baking; leave 1 inch (2.5 cm) of space between them. Bake for 10 minutes, or until the edges are golden brown. Leave the cookies on the sheet for just a couple of minutes until they are firm enough to be transferred to a wire rack to cool completely.

Additional notes

The summery and refreshing flavor of orange pairs beautifully with the richness of tahini in these buttery cookies. Consider using agave nectar instead of maple syrup, but be sure to preheat the oven to 325°F (170°C, or gas mark 3) in this case. Replacing orange zest with lemon zest is also a nice alternative. Be sure to remove the cookies from the oven after 10 minutes so that they remain chewy and don't get dry,
