Recipe Description
If you save the heels and other slices of stale bread, you can make this moist cake-like bread. Don't think of this as a bread pudding. The bread crumbs create a texture similar to a moist, chewy corn bread. Serve at room temperature with coffee, or as an after school snack for children.

2 Cup(c)  milk
1 Cup(c)  brown sugar
1/2 Cup(c)  butter, melted, plus some for greasing the pan
12 Slice(sli)  white bread, including ends
1   egg
2 Teaspoon(t)  cinnamon, ground
1/2 Cup(c)  raisins
1/2 Cup(c)  walnuts, coarsely chopped
1/2 Teaspoon(t)  baking powder
1   egg white
1 Teaspoon(t)  flour


In advance, tear apart the bread and allow to dry out in a warm oven or overnight. When ready to prepare the sweet bread, crumble the bread into tiny pieces and put in a large bowl. The food processor works very well for this but leave some texture. There should be about 10 cups of coarse, irregular crumbs. Preheat the oven to 325 degrees F. Coat a 9 by 12 inch pan with butter and then sprinkle on the flour, shaking off any excess. Pour the milk into a medium saucepan, add the sugar, butter and salt, and warm it over very low heat until the sugar dissolves and the butter melts. Beat the egg and egg white in a small bowl until frothy and add to the bread. Add the cinnamon, raisins, walnuts and baking powder, and toss thoroughly. Pour the milk mixture into the bread mixture, fully combining the liquid with the other ingredients. Spoon everything evenly into the buttered and floured pan. Bake, uncovered, about 30 minutes, until light brown. Remove from the oven and let cool slightly before cutting into squares.
