Tasty Banana Blueberry Muffins

This recipe combine two great muffin flavors into one.

1 Cup(c)  mashed banana
2   egg whites or 1 extralarge egg
1/2 Cup(c)  water
1/3 Cup(c)  vegetable oil
2 Cup(c)  all-purpose flour
1 Teaspoon(t)  baking soda
2 1/4 Teaspoon(t)  baking powder
1 Cup(c)  fresh or frozen blueberries, left to thaw in a strainer


Preheat oven to 350F. 

Prepare 18 standard-sized muffin cups with paper liners. In a large bowl, stir together banana, egg, water, and oil. Add flour and mix.stir in baking soda and baking powder quickly, and then mix (28 to 30 beats) .gently fold in blueberries.

Immediately spoon batter into prepared muffin cups.

Bake about 20 minutes, or until a cake tester inserted in the center of one mulfin comes out clean.

As soon as they are done, remove muffins from tins and cool on a wire rack.

Serve warm or cool completely and store in an airtight container on countertop or freeze.
