When my grandson Jason was in kindergarten, I had the pleasure of assisting in his class for a few days when I was visiting. His teacher sent me a certificate of appreciation along with her family recipe for applesauce muffins. They are sweet and welcoming, with a moist, cakey texture.

Ingredients

2 Cup(c)  baking mix
3/4 Cup(c)  sugar
2 Teaspoon(t)  cinnamon, ground
1/2 Cup(c)  milk
1/2 Cup(c)  unsweetened applesauce
2 Tablespoon(T)  vegetable oil
1   large egg
4 Tablespoon(T)  unsalted butter

Preparation

Preheat the oven to 375° F. Fill 12 muffin cups with paper liners. Mix all the muffin ingredients together in a bowl, and fill the cups two thirds full with the batter. Bake on the center oven rack until a cake tester inserted in the center comes out dry, 12 minutes. Let the muffins cool completely in the pan set on a wire rack. To prepare the topping: Melt the butter in a saucepan over medium heat, and pour it into a flat dish. Mix the sugar and cinnamon in another flat dish. Dip the muffin tops in the butter, then in the cinnamon sugar. The glazed muffins are best eaten the day they're made.
