Recipe Description
A great choice for parties, these skewers of marinated chicken can be prepared in advance and served at room temperature.  Beef, pork or even lamb fillet can be used instead of chicken, if you prefer.

1   fresh ginger root, 1 inch long, peeled and chopped
6 Teaspoon(t)  fresh coriander, chopped
1   small fresh red chilli, seeded and chopped
1 Teaspoon(t)  chinese style chilli sauce
6 Teaspoon(t)  light brown sugar
4 Clove(clv)  garlic
12 Teaspoon(t)  fresh lime juice
15 177/200 Gram(g)  boneless, skinless chicken breast portions
12 Teaspoon(t)  tamari, or light soy sauce
18 Teaspoon(t)  vegetable oil
12   red bell pepper strips, to garnish
1/4 Cup(c)  sesame seeds, for sprinkling
1/2 Cup(c)  peanut oil, for brushing

Preparation

To prepare the marinade:  Place all the marinade ingredients in a food processor or blender and process until smooth and well blended, scraping down the sides of the bowl once or twice.  Pour the marinade into a shallow, non-metallic dish and set aside.  Put all the peanut sauce ingredients into the same food processor bowl or blender goblet and process until well blended.  If the sauce is too thick, add a little water and process again.  Pour into a small bowl, cover and set aside until ready to serve.  Slice the chicken breast portions into thin strips, then cut the strips into 1 1/2 inch pieces.  Add the chicken pieces to the marinade.  Toss well to coat, cover with clear film (plastic wrap) and marinate for about 3 to 4 hours in a cool place, or overnight in the refrigerator.  Preheat the grill or broiler.  Line a baking sheet with foil and brush lightly with oil.  Thread 2 to 3 pieces of the marinated chicken on to skewers and sprinkle with the sesame seeds.  Grill (broil) for 4 to 5 minutes until golden, turning once.  Serve hot or cold with the peanut sauce and a garnish of red pepper strips.
