Recipe Description
Cabbage becomes sweet when cooked, and is a great complement to tender beans and tangy tomatoes. A tiny bit of sugar helps counteract the acid in the tomatoes.

Ingredients

1 Tablespoon(T)  olive oil
1   onion, chopped
4 Clove(clv)  garlic, minced
3 Cup(c)  shredded green cabbage
14 Ounce(oz)  diced tomatoes, undrained
6 Ounce(oz)  tomato paste
2 Cup(c)  chicken stock
3 Cup(c)  water
1 Teaspoon(t)  sugar
1/8 Teaspoon(t)  white pepper
15 Ounce(oz)  great northern beans, drained
1/3 Cup(c)  half-and-half cream

Preparation

In large saucepan, heat olive oil over medium heat. Add onion and garlic; cook and stir until crisp-tender, about 4 minutes. Add cabbage; cook and stir for 3 minutes longer.

Add tomatoes, tomato paste, chicken stock, water, sugar and pepper. Cook and stir until tomato paste dissolves in soup. Then stir in beans and bring to a simmer. Simmer for 10 minutes, then add half-and-half. Heat until the soup steams, and serve.
