Tomato, Mozzarella And Red Onion Salad With Basil And Caper Dressing

12 Teaspoon(t)  fresh flat leaf parsley, chopped
9 Teaspoon(t)  salted capers, rinsed
1 Teaspoon(t)  mustard
30 Teaspoon(t)  extra virgin olive oil
3 Teaspoon(t)  balsamic vinegar
1 Pinch(pn)  salt, to taste
10   large ripe tomatoes
8 Ounce(oz)  small packets mozzarella di bufala cheese, drained and sliced
2   small red onions, chopped
1 Pinch(pn)  black pepper, ground, to tatse
353/400 Gram(g)  fresh basil

Preparation

To prepare the dressing: Put the garlic, basil, parsley, half the capers and the mustard in a food processor or blender and process briefly to chop. Then, with the motor running, gradually pour in the olive oil through the feeder tube to make a smooth puree with a dressing consistency. Add the balsamic vinegar to taste and season with ground black pepper. Alternatively, the dressing can be made by pounding the ingredients in a mortar and adding the oil by hand. Layer slices of tomato on 8 serving plates, topping each with slices of mozzarella. Sprinkle chopped red onions overall. Drizzle dressing lightly over each plate. Add salt and pepper, if desired.
