Recipe Description
A box of macaroni and cheese turns into dinner with a few additions. You could use any vegetables you have on hand, but the" holy trinity" of bell pepper, onion and celery add nice flavor.

Ingredients

5 Tablespoon(T)  butter
1/2 Cup(c)  onion, chopped
1/2 Cup(c)  celery, chopped
1/2 Cup(c)  green bell pepper, chopped
7 1/4 Ounce(oz)  macaroni and cheese mix
1/4 Cup(c)  milk
1/4 Cup(c)  sour cream
1/2 Teaspoon(t)  paprika
6 Ounce(oz)  light tuna, drained

Preparation

Bring a large pot of water to a boil. Meanwhile, in large saucepan, melt 3 tablespoons of butter over medium heat. Add onion, celery and bell pepper. Cook and stir until crisp tender, about 4 minutes. Cook macaroni from mix until al dente. Drain and add to pan with vegetables along with cheese packet, milk, remaining butter, sour cream and paprika. Stir until combined, then gently stir in tuna. Cook for 2 to 3 minutes until hot, then serve immediately.
