Recipe Description
Butternut squash is prebaked to the point of softness, then mashed and combined with nuts and spices for a second round of baking.  A lovely dish to serve during the holidays.

Ingredients

1 Tablespoon(T)  walnuts or pecans, ground
1/8 Teaspoon(t)  nutmeg, ground
2 Tablespoon(T)  light brown sugar, packed
1/4   pepper, freshly ground
1/2 Teaspoon(t)  kosher salt
2 Teaspoon(t)  brandy
1 Tablespoon(T)  unsalted butter, softened
2 Pound(lb)  butternut squash

Preparation

Bake the squash until very soft, about 45 minutes.  Preheat the oven to 400° F.  Coat a 1 quart casserole with nonstick spray.  Scoop out the squash and combine it with all the remaining ingredients, except the nuts.  Mash vigorously until fluffy.  Spread it into the casserole.  Dust the nuts on the surface.  Bake for about 30 minutes, until the casserole begins to brown.
