Recipe Description
This recipe has a silken tofu base, a great creamy texture perfect for mousse. Dairy free, it is a dessert to be treasured by those with special dietary preferences.

12 Ounce(oz)  non dairy semisweet chocolate chips
1 Pound(lb)  silken tofu, cut into cubes
1/2 Cup(c)  powdered sugar
1 Tablespoon(T)  pure vanilla extract
1/4 Cup(c)  raspberry jam
4 Ounce(oz)  fresh raspberries


Melt chocolate chips in the microwave, in a microwave safe bowl, stirring occasionally to avoid scorching. Set aside. In a blender or food processor, add the tofu and blend for about 1 minute. Add the sugar and vanilla and continue to blend. Add the jam and continue to blend. Drizzle in the melted chocolate a little bit at a time, until it is all incorporated. Your mixture should be like that of thick sour cream. Divide among 4 dessert bowls and chill for about 1 hour. Top each bowl with an equal amount of fresh berries upon serving.
