1   non stick cooking spray
1 1/2 Cup(c)  creamy no-stir peanut butter
1 Cup(c)  non dairy semisweet chocolate chips
1 Tablespoon(T)  pure vanilla extract
1 Cup(c)  full-fat coconut milk
3 Cup(c)  granulated sugar


Line an 8 or 9 inch square baking pan with aluminum foil or parchment paper and lightly coat with nonstick spray. In a large sized heat resistant mixing bowl, combine the peanut butter, chocolate chips, and vanilla. In a saucepan, mix together the coconut milk and sugar. Bring to a full boil. (Big rolling bubbles, not little ones.) Boil hard for exactly 1 minute. Pour the coconut mixture into the peanut butter mixture and stir vigorously until well combined and the chocolate begins to melt. It won't completely melt, and that's okay, because it will marble with the peanut butter as it hardens. You have to work very quickly because the mixture will begin to set almost immediately. Quickly pour into the prepared pan and let cool and harden completely, about 1 hour. Cut into small squares and enjoy.
