3/4 Cup(c)  soy yogurt
1 Cup(c)  raisins
1/2 Cup(c)  non dairy butter
1/2 Cup(c)  unsweetened applesauce
1/2 Cup(c)  soy milk
1 Cup(c)  granulated sugar
1 Teaspoon(t)  pure vanilla extract
1 Teaspoon(t)  pure orange extract
3 Cup(c)  all purpose flour
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  salt
1 Teaspoon(t)  cinnamon, ground
1/2 Teaspoon(t)  ginger, ground
2 Cup(c)  zucchini, finely grated
1/2 Cup(c)  brown sugar, not packed
1/2 Cup(c)  walnuts, chopped
1 Tablespoon(T)  poppy seeds

Preparation

Preheat the oven to 350°F. Line two standard muffin tins with paper liners. Spray cooking spray into the liners to make it easier to peel the muffins off the papers. Using an electric mixer, beat together the sugar, brown sugar and butter, until fluffy. Add the applesauce, milk, yogurt, vanilla and orange extract, and beat until smooth. In a separate bowl, mix together the flour, baking powder, baking soda, salt, cinnamon and ginger. Fold the wet ingredients into the dry, being careful not to over mix. Fold in the zucchini, raisins, walnuts and poppy seeds. Fill 24 muffin cups two thirds full for standard muffins, or fill 16 muffin cups all the way to the top for more dome shaped muffins. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean. Let cool for 5 minutes before transferring to a wire rack.

Additional notes

Note: Make sure muffins are cool before transferring to rack, as they may break apart on you if they are still hot.
