Great make ahead meal on a cold winters day after a hard day at work. Grab a wedge of corn bread and you have a great hearty meal.

1 Clove(clv)  garlic, chopped
1/8 Teaspoon(t)  sait
1/4 Teaspoon(t)  dried oregano
1 Teaspoon(t)  chili powder
1/4 Cup(c)  chopped onion
1/3 Cup(c)  sweet red pepper
3/4 Cup(c)  coarsely chopped zucchini or yellow summer squash
1 Cup(c)  whole kernel corn
1 1/2 Cup(c)  tomato juice, low sodium
15 Ounce(oz)  black beans, drained and rinsed


In 1 1/2-quart slow cooker, combine drained beans, tomato juice, corn, zucchini, sweet pepper, onion, chili powder, oregano, salt and garlic.

Cover slow cooker; cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours.
