Wheat Cheddar Popovers

Cheddar cheese and whole wheat make these popovers rich and nutty in flavor.

1/4 Cup(c)  reduced fat cheddar cheese, shredded
1/2 Teaspoon(t)  salt
1/2 Cup(c)  unbleached, all purpose white flour
1/2 Cup(c)  whole wheat flour
1 Tablespoon(T)  unsalted butter, melted
1 Cup(c)  1% lowfat milk
2   eggs


Coat 6 popover cups or muffin cups with butter flavored nonstick spray.  Preheat the oven to 400°F.  Whisk together the eggs and milk.  Stir in the butter, flours and salt.  Mix thoroughly but don't beat.  Pour into the popover cups, filling halfway.  Top with the cheese.  Bake for 25 minutes, then reduce the oven temperature to 350°F, and bake for 10 to 15 minutes longer.

This is a great popover recipe. I added a bit of garlic powder when I made them for added flavor.
