Carrot bread is a wholesome snack my kids love to eat afterschool. Try it in the morning, spread with light cream cheese for a quick breakfast.

Ingredients

2 Tablespoon(T)  canola oil
2 Tablespoon(T)  honey
1/2 Cup(c)  fat free cottage cheese
1 Cup(c)  carrots, grated
1 1/2 Teaspoon(t)  dill weed
1/2 Teaspoon(t)  dry mustard
1 Teaspoon(t)  orange peel
1/2 Teaspoon(t)  salt
2/3 Cup(c)  whole wheat flour
1 1/3 Cup(c)  all purpose flour
1 1/2 Teaspoon(t)  dry yeast

Preparation

All ingredients should be at room temperature. Place ingredients into pan in the order suggested by the machine's manual. Set for a 2 pound loaf and bake as directed.
