1/2 Cup(c)  whole wheat flour
1 Cup(c)  unbleached, all-purpose white flour
1/2 Teaspoon(t)  ground cinnamon
1/4 Teaspoon(t)  ground nutmeg
1 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
12 Ounce(oz)  unsweetened evaporated nonfat milk
1 Cup(c)  canned pumpkin
1/2 Teaspoon(t)  vanilla extract
1   egg


Sift together the flours, spices, baking powder, and salt.

In a separate bowl, whisk together the egg, milk, pumpkin, and vanilla.

Pour the liquid ingredients into the dry.

Stir until the batter is moist throughout.
Preheat a skillet or griddle and spray with a nonstick spray or brush lightly with oil.

Pour 1/4 cup of batter per pancake onto the pan, making sure the pancakes don't touch, and cook until bubbles start to burst on the surface.

Turn and cook until golden.
