You'll love this recipe! It uses vanilla yogurt, vanilla extract and raisins. (Leave out the raisins if you don't care for them.) The flavor is terrific and so is the texture. Serve hot. Or freeze, then reheat in defrost mode in the microwave for a very short time. Each slice has about 70 calories.

1 1/4 Cup(c)  warm, no sodium water, 100° to 110° f
1 Cup(c)  vanilla yogurt
1 Tablespoon(T)  cider vinegar
1 1/2 Tablespoon(T)  extra virgin olive oil
1 Teaspoon(t)  vanilla extract
3 Cup(c)  unbleached bread flour
3 Cup(c)  white whole wheat flour
2 Tablespoon(T)  vital wheat gluten
1 Teaspoon(t)  onion powder
1/2 Teaspoon(t)  ascorbic acid
2 Teaspoon(t)  white granulated sugar or splenda
1 Tablespoon(T)  bread machine yeast
1/2 Cup(c)  black seedless raisins or currants, packed


Place all the ingredients except for the raisins or currants into the bread machine pan in the order listed. Set for dough. At the sound of the raisin buzzer, add the raisins and let the machine go through the rest of the cycle. (You may have to help your machine get this one started so that the ball forms properly.) Roll the dough out onto lightly floured bread board. Press down gently until 1 inch thick. If you have an oven with a proof button, turn that on now. If not, you'll need an oven or a space in your house that's at about 80 degrees F. Cut the dough into 3 sections. You can make small mini loaves in mini loaf pans, long loaves in a French bread rack, or standard loaves in loaf pans. Lightly grease the loaf pans. If making all mini loaves, cut off 12 equal pieces. Or, if you are making a combination, cut the dough into sections that will work for your pans. Shape the dough by rolling. Set into pans, cover with waxed paper, and place into the warm oven or other warm spot. Let rise for 1 hour. Preheat the oven to 375° F. Bake the loaves for 20 to 30 minutes, or until dark golden brown. Cool on a rack. Serve warm.
