This zucchini bread is wonderfully moist and has the surprise flavor of fresh blackberries.  Your family will love it!

16 Ounce(oz)  blackberries, drained
1 1/2 Cup(c)  zucchini, finely shredded
2 Teaspoon(t)  low sodium baking powder
1 Teaspoon(t)  baking soda
1 1/2 Cup(c)  all purpose flour
1 1/2 Cup(c)  whole wheat flour
1/2 Cup(c)  unsweetened orange juice
1 Tablespoon(T)  orange peel, freshly grated
1/4 Cup(c)  canola oil
3   egg whites
1/2 Cup(c)  sugar


Preheat oven to 350°F.  Combine all ingredients, except berries and zucchini, in a bowl, and mix until just blended.  Fold in the berries and zucchini.  Turn into a loaf pan sprayed with nonstick cooking spray and bake for 1 1/2 hours.  Check after the first 45 minutes to prevent browning too quickly.  Cool on a wire rack.
