Recipe Description
Choose a variety of squash you enjoy most when preparing this recipe.  I have prepared it using acorn squash, when I have had vegetarians joining our Thanksgiving feast.  Be sure to see the recipe for Wild Rice Stuffing for the filling used in this dish.

Ingredients

1   recipe for wild rice stuffing
1 Tablespoon(T)  sherry
2   egg whites, lightly beaten
1   squash, halved, seeded and softened by baking or steaming

Preparation

Combine the stuffing, sherry and egg whites.  If the squash rolls around, slice off a piece from the bottom so that it sits securely.  Pack stuffing into the squash.  At this point, the squash can be tightly wrapped and stored in the refrigerator for up to 1 day.  Bake in a preheated 375° F oven for 35 minutes.  To keep them moist, put a little water in the bottom of the baking pan before baking.
