Recipe Description
This stuffing recipe is so easy to prepare, tastes delicious, and can be used for a variety of different occasions.  An excellent filling for poultry and game birds, as well as vegetarian meals like stuffed squash.

Ingredients

2   oranges
1/2 Teaspoon(t)  pepper, freshly ground
1 Teaspoon(t)  kosher salt
1/2 Cup(c)  pecans, toasted and chopped
1/2 Teaspoon(t)  orange zest, minced
2   ribs celery, including leaves, chopped
1 Cup(c)  medium leek, washed well and minced
1 Cup(c)  shallots, chopped
3 Clove(clv)  garlic, chopped
2 Teaspoon(t)  olive oil
2 1/2 Cup(c)  reduced sodium defatted chicken broth
1 Cup(c)  wild rice

Preparation

Cook the wild rice in the the broth until all the liquid is absorbed.  Meanwhile, preheat the oven to 375° F.  Heat the oil in a small saute pan and cook the garlic, shallots and leek until golden.  Add the celery and saute for a few more minutes.  Combine the cooked rice, sauteed vegetables, orange zest, pecans, salt and pepper.  Cut the oranges in half and cut out the segments as you would a grapefruit.  Add these to the stuffing.  Place the stuffing in a 2 to 2 1/2 quart casserole and bake for 30 minutes.

Additional notes

Tip:  Some varieties of wild rice come partially cooked and need less liquid, so if your rice came in a box, read the directions and add as much broth as they suggest.  But if it also comes with a spice packet, discard it.
