A light yellow cake made without dairy products.

3/4 Cup(c)  non dairy yogurt
1 Tablespoon(T)  pure vanilla extract
1 Cup(c)  granulated sugar
1/2 Cup(c)  non dairy butter, softened
1/4 Teaspoon(t)  salt
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
3 Cup(c)  all purpose flour
1   nonstick cooking spray


Preheat the oven to 350°F. Lightly coat a 9 inch cake pan with nonstick spray. In a medium sized bowl, combine the flour, baking soda, baking powder, and salt. In a large sized bowl and using an electric mixer, cream together the butter and sugar. Add the vanilla and yogurt and beat until creamy. Slowly add the flour mixture, and beat on low speed to combine. Pour evenly into the cake pan. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting.
