Recipe Description
This unusual drink is a southern Central American specialty. It's a sort of an unblended milkshake made from corn. The corn of choice would be maiz amarillo trilla, a dried, hulled yellow corn similar to hominy. This product is available at Hispanic markets and many supermarkets. You can also make the drink with canned hominy, which is available in the international aisle of most supermarkets. If using dried com, begin the recipe a day before serving.

Ingredients

1/2 Cup(c)  dried hulled yellow corn, or drained canned hominy
4 Cup(c)  water
1   cinnamon stick
14 Ounce(oz)  evaporated skimmed milk
4 Tablespoon(T)  sugar
1 Teaspoon(t)  vanilla extract
1/2 Teaspoon(t)  nutmeg, ground

Preparation

 

In a small bowl, combine the corn and 1 cup of the water. Cover and let soak for 6 hours or overnight in the refrigerator. The next day, in a large heavy saucepan, combine the corn and its soaking water, the remaining 3 cups water, and the cinnamon stick. (If using drained canned hominy, combine the hominy with 4 cups water and the cinnamon stick in a large heavy saucepan.) Bring to a boil over high heat. Reduce the heat to medium, loosely cover, and simmer for 30 minutes, or until the corn is soft. Remove and discard the cinnamon stick. Stir in the evaporated milk and 4 tablespoons of the sugar. Simmer for 5 minutes. Remove from the heat and let cool to room temperature. Refrigerate for at least 4 hours or up to 3 days. Stir in the vanilla extract and 1/2 teaspoon of the nutmeg. Taste and add more sugar and nutmeg, if desired. Serve in tall glasses with ice cubes.
