Recipe Description
Carrot slices can be used in place of the zucchini in this easy to prepare microwave side dish.

Ingredients

1 Tablespoon(T)  butter
1/4 Teaspoon(t)  salt
1/2 Teaspoon(t)  basil, crushed
1/4 Cup(c)  parmesan cheese
1 1/2 Pound(lb)  zucchini, sliced 1/4 thick

Preparation

Arrange zucchini slices in bottom of 1 quart casserole.  Mix cheese, basil and salt.  Sprinkle over zucchini.  Place butter in a custard cup and microwave on high for 30 seconds until melted.  Drizzle butter over top of zucchini.  Cover and microwave on high for 4 to 5 minutes until zucchini is tender crisp, turning dish two times.
