When you or a relative has ham for the holidays, ask for the ham bone and add it to this soup. It's full of flavor and adds a real richness to this simple and inexpensive recipe.

Ingredients

2 Cup(c)  split peas
9 Cup(c)  water
3   carrots, sliced
2   potatoes, peeled and diced
1   onion, chopped
3 Clove(clv)  garlic, chopped
1 Teaspoon(t)  salt
1/8 Teaspoon(t)  pepper
1/2 Teaspoon(t)  thyme leaves, dried
2 Cup(c)  split peas
1 Tablespoon(T)  mustard
1 Tablespoon(T)  lemon juice

Preparation

Rinse the split peas and sort to remove any debris. Combine all ingredients except 2 cups of split peas, mustard and lemon juice in large soup pot. Bring to a simmer, then reduce heat to low, cover, and simmer for 1 1/2 hours, or until peas fall apart. Add 2 cups of rinsed split peas and bring back to a simmer. Simmer for 45 to 50 minutes until the just added peas are soft. Stir in mustard and lemon juice and let stand for 10 minutes, then serve.
