Abruzzo Style Ragu

Recipe Description
The vegetables for this ragu are left whole, and some of the meats are cooked on the bone.  At the end of the cooking time, the vegetables and loose bones are removed.  The meats are typically removed from the sauce and served as a second course.  Serve this sauce with chunky pasta shapes like rigatoni.

Ingredients

1   medium carrot
1   rib celery
1   onion
2 Cup(c)  water
4 Pound(lb)  fresh tomatoes, peeled, seeded and chopped
2 Tablespoon(T)  tomato paste
1/2 Cup(c)  dry red wine
1 Pound(lb)  boneless veal stew meat, cut into 1 inch pieces
1 Pound(lb)  lamb neck or shoulder with bones, cut into 2 inch pieces
1 Pound(lb)  pork shoulder with some bones, cut into 2 inch pieces
3 Tablespoon(T)  olive oil
1 Pinch(pn)  black pepper, freshly ground, to taste
1 Pinch(pn)  salt, to taste

Preparation

In a large heavy pot, heat the oil over medium heat.  Add the meats and cook, stirring occasionally, until lightly browned.  Add the wine and cook until most of the liquid evaporates.  Stir in the tomato paste.  Add the tomatoes, water, salt and pepper to taste.  Add the vegetables and bring to a simmer.  Cover the pot and cook, stirring occasionally, until the meat is very tender, about 3 hours.  If the sauce seems thin, uncover and cook until slightly reduced.  Let cool.  Remove any loose bones and the vegetables.  Reheat before serving or cover and store in the refrigerator up to 3 days, or in tbe freezer up to 3 months.
