Pizza isn't always tomato sauce and mozzarella. Here capers and feta contribute the flavors of Greece.

1/2 Cup(c)  sun dried tomato halves
1 Teaspoon(t)  olive oil
1/2 Cup(c)  red onions, sliced
1 1/2 Teaspoon(t)  capers, drained
1/2 Cup(c)  feta cheese, crumbled
1   green bell pepper, julienned
1   homemade pizza dough, or 1 small pizza shell


Soak the dried tomatoes in very hot water for 5 minutes, then drain and slice. Put the oven rack on the lowest rung in the oven and preheat the oven to 450° F. If necessary, coat the pizza pan or baking sheet with nonstick spray. Heat the oil in a small nonstick pan. Saute the bell pepper and onions until the onions wilt. Set aside. Roll or stretch the dough into a 10 inch pie, or shape it to fit your pan. Place the dough on the baking sheet. Place in the lower third of the oven and bake for 5 minutes. Prick with a fork where it balloons out. Place the onions and peppers on the pizza. Use a rubber spatula to scrape all the oil out of the pan and onto the pizza. Arrange the tomatoes and capers on top. Dot with small pieces of the cheese. Bake until the crust is done and the cheese softens, about 6 to 8 minutes. This cheese will not spread or bubble like mozzarella.
