Recipe Description
This salad, or comparable greens and fruit combinations are served in all parts of Africa. The salad is ideal for a group of women on any occasion and men also appreciate it on a hot day. It is especially appropriate for a weekend or outdoor luncheon.

Ingredients

2 Tablespoon(T)  sugar
1 Cup(c)  sweetened whipped cream
1 Cup(c)  mayonnaise
4   limes, zested and juiced
3   bananas, cut in chunks
4   oranges, thinly sliced with skins left on
1   fresh coconut, cut in thin slices
1   avocado, dipped in lemon juice and cut in strips
1   fresh mango, cut in strips
1   fresh pineapple, cut in fingers
1 Quart(q)  lettuce
1 Quart(q)  chicory
2 Quart(q)  romaine
2 Quart(q)  raw spinach

Preparation

Line the bowls with the mixture of greens. Arrange the fruits attractively in the individual salad bowls, or in one large bowl. Drizzle with lime dressing.
