1   lemon, juiced
1   lemon, zested
1   salt and pepper
1 Tablespoon(T)  fresh mint leaves
1 Tablespoon(T)  extra virgin olive oil, plus extra to serve
2   scallions, finely chopped
1 Cup(c)  soft goat cheese
1   garlic clove, crushed
12 Ounce(oz)  fresh shelled fava beans


Bring a pan of lightly salted water to a boil, add the beans, and cook for 8-10 minutes, until tender.

Drain well and let cool. When the beans are cool enough to handle, slip off their skins and put the beans in food processor.

Add the cheese, garlic, scallions, oil, lemon rind, lemon juice, and mint leaves to the beans and process until well mixed.

Season the dip with salt and pepper to taste.

Turn into a bowl, cover, and chill in the refrigerator for at least 1 hour before serving.
