Because this spicy sauce recipe is made from pantry staples, and because it freezes well once prepared, it has become one of the standards in my kitchen.

Ingredients

6 Cup(c)  cooked rice or pasta
1/4 Cup(c)  unsalted roasted peanuts, coarsely chopped
2 Tablespoon(T)  unsalted, unsweetened peanut butter
1/8 Teaspoon(t)  tabasco sauce
1/8 Teaspoon(t)  red pepper flakes, crushed
1/2 Teaspoon(t)  kosher salt
28 Ounce(oz)  crushed tomatoes
1/2 Teaspoon(t)  coriander, ground
2 Teaspoon(t)  curry powder
2 Clove(clv)  garlic, minced
1 Cup(c)  onions, chopped
1 1/2 Teaspoon(t)  vegetable oil

Preparation

Heat the oil in a heavy bottomed pot.  Saute the onions and garlic in the oil until the onions are soft and golden.  Add the curry powder and coriander, and cook for 1 minute longer.  Stir in the tomatoes, salt, pepper flakes and Tabasco. Cover and simmer over low heat for 15 minutes.  Stir in the peanut butter and peanuts.  Cook for about 5 minutes longer, stirring frequently.  The sauce is ready when it has thickened.  Serve over rice or pasta.
