Recipe Description
Albondigas is the Spanish word for meatballs. In this version, spicy bite sized meatballs are simmered in a clear beef broth. iMuy bueno!

8 Cup(c)  rich beef stock or broth (homemade preferred)
1   bay leaf
1   yellow onion, quartered and separated
3 Clove(clv)  garlic, halved
1/2 Teaspoon(t)  salt
1 Pinch(pn)  pepper, freshly ground, to taste
36   premade mexican meatballs
1/4 Cup(c)  dry sherry or dry white wine


In a large soup pot over high heat, combine all ingredients except meatballs and sherry. Bring to a boil. Reduce heat to medium low and simmer, uncovered, 15 minutes. Strain and discard solids. Return stock to pan. Bring to a boil and drop meatballs, a few at a time, into stock. Reduce heat to medium low and simmer, covered, until meatballs are cooked through, 10 to 15 minutes. Add sherry just before serving.

A Spanish Classic

I love albondigas, and this recipe is a great version of a Spanish classic. Make sure to make the meatballs bite sized so they float in the broth well.
