Almond Cream With Hot Chocolate Sauce

1 Ounce(oz)  butter, diced
4 Tablespoon(T)  water
3 Tablespoon(T)  golden syrup
3 1/2 Ounce(oz)  semisweet chocolate, broken into pieces
1/4 Teaspoon(t)  vanilla extract
2 Ounce(oz)  confections sugar
1/4 Pint(pt)  light cream
1/4 Teaspoon(t)  almond extract
1/2 Pint(pt)  heavy cream
6 Ounce(oz)  blanched almonds


Toast the almonds on a baking sheet in a preheated 400°F oven for 7 to 10 minutes, stirring occasionally, until golden brown. Immediately tip onto a cutting board and let cool. Coarsely chop half the nuts and finely grind the remainder. Whip the heavy cream with the almond extract until soft peaks form. Stir in the light cream and continue whipping, sifting in the sugar in 3 batches. Transfer to an ice cream maker and freeze. When the cream is almost frozen, transfer it to a bowl and stir in the chopped almonds. Put the mixture in a loaf pan and smooth the top. Wrap in foil and put in the freezer for at least 3 hours. To make the hot chocolate sauce: Place a heatproof bowl over a pan of simmering water. Add the chocolate, syrup, and water and stir until the chocolate melts. Stir in the butter and vanilla extract until smooth. To serve, dip the bottom of the loaf tin in boiling water for a couple of seconds. Invert onto a cutting board, giving a sharp shake to release the frozen cream. Coat the top and sides with the finely chopped almonds. Use a warm knife to slice into 8 to 12 slices. Arrange two slices on each plate and spoon over the hot chocolate sauce.
