Almond Crusted Pork Loin

Crunchy ground almonds and garlic make a delicious crust for a tender pork loin. Serve this with your favorite vegetable for a balanced and healthy low sodium meal.

Ingredients

1 Clove(clv)  garlic, minced
1/2 Cup(c)  almonds
2 Pound(lb)  pork loin
1   egg, beaten

Preparation

Grind the almonds in a food processor until finely ground. Add the garlic and a pinch of salt if desired. Roll the pork loin in the beaten egg followed by the ground almonds. Place on a baking sheet and roast in a 375º oven for about an hour, until instant read thermometer reads 160º. Allow pork to rest for 10-15 minutes before slicing and serving.
