A wonderfully delicious sauce for chicken, pork, and fish.

Ingredients

8 Ounce(oz)  almonds, blanched
3 Tablespoon(T)  oil
2   celery stalks, chopped
1   onion, diced
1/4 Pound(lb)  mushrooms, diced
5 Ounce(oz)  water chestnuts
1 Tablespoon(T)  soy sauce
1 Dash(ds)  salt and fresh pepper to taste
1/2 Cup(c)  chicken broth or water

Preparation

In a large skillet, saute blanched almonds in oil until golden and remove from pan. Add celery and onion and saute until golden. Add mushrooms and cook for 3 minutes. Return almonds to skillet and add water chestnuts, soy sauce, salt, pepper; and chicken broth; cook only until hot. Serve over chicken, pork, or fish. The sauce really revitalizes leftovers!


TO BLANCH AND REMOVE SKINS:
Almonds can be purchased blanched or you can soak them in boiling water for 5 minutes and slip off skins. Dry on absorbent paper.
