Ingredients

1 Cup(c)  matzoh meal
1   parchment paper, vegetable oil, or vegetable cooking spray for the baking sheet
1 Cup(c)  matzoh farlel
1/2 Cup(c)  sugar
1/2 Teaspoon(t)  ground cinnamon
1/2 Teaspoon(t)  salt
2   large eggs
1/2 Cup(c)  vegetable oil
1/2 Cup(c)  chopped walnuts

Preparation

Preheat the oven to 350°F. Line a baking sheet with parchment paper or grease it. (If two baking sheets will fit side-by-side on your oven rack, use two.)

Combine the matzoh meal, farfel, sugar, cinnamon, and salt in a medium-size bowl.

Beat the eggs with a fork in a separate bowl until foamy, and then beat in the oil. Add the egg mixture to the matzoh meal mixture, and combine well. Fold in the nuts.

Drop rounded teaspoonfuls of the dough onto the prepared baking sheet, and flatten them slightly. They don't spread, so they can be placed close together, but without touching. Bake on the center oven rack until the cookies are golden brown on the bottom and edges, about 15 minutes. Let the cookies coolon the baking sheet set on a wire rack until they can be safely moved, about 1 minute. Then transfer them to the rack to cool completely.

Repeat, baking and cooling the remaining cookies. Once cooled, they are ready to serve.
