Recipe Description
The flour used in this pie crust recipe is unique.  Amaranth is derived from the Amaranthus plant, which has a variety specifically grown for food.  Think of it as flowers for the taste buds.

3/4 Teaspoon(t)  baking powder
1/2 Tablespoon(T)  salt
2 Teaspoon(t)  vegetable oil
3 Tablespoon(T)  cold water
2 Teaspoon(t)  vegetable oil
3/4 Cup(c)  amaranth flour


In a medium sized bowl, stir together flour, baking powder and salt.  Set aside.  In a small bowl, stir together oil and water.  Pour liquid mixture over dry mixture and stir with a fork to form a soft dough.  Place dough into an oiled 9 inch pie plate.  Press the dough over bottom and sides evenly, pressing dough into a thin crust.  Add pie filling of choice.  Add topping of choice and bake according to directions for pie filling.
