Super light angel food cake with nice chocolate flavor.

1 1/4 Cup(c)  egg whites
1/4 Teaspoon(t)  salt
1 Teaspoon(t)  cream of tartar
1 1/4 Cup(c)  granulated sugar, sifted
3/4 Cup(c)  cake flour, sifted
4 Tablespoon(T)  cocoa
1 Teaspoon(t)  vanilla


Beat egg whites, salt, and cream of tartar until the whites mixture stands in peaks. Gradually fold in sugar. Fold in very gradually, a tablespoon or two at a time, the sifted flour and cocoa mixture. Then gently add the vanilla. When well blended, pour into an ungreased tube pan and bake at 275 degree F for 30 minutes then increase temperature to 325 degrees F and bake 30 to 45 minutes longer.
